The pizza-course

The Copenhagen Hospitality College together with Nordic Pizza Academy are offering the first wide and complete education in Northern Europe about pizza. The core purpose of our academy is to provide a professional training to prepare both chefs and beginners to become specialist pizzaiolo.

By taking a step-by-step, hands-on approach, our students will gain a comprehensive understanding of the various aspects of the pizzaiolo’s profession. The course will be shaped in order to provide the necessary skills to become a professional pizzaiolo, including using different dough recipes, improving stretching techniques, ingredients quality analysis and baking fundamentals. By the end of the course the students will achieve a comprehensive and extended knowledge about pizza and its workflow process.

The course in pizza making is specifically designed to meet the career developments and needs of the professional pizza chef. The lectures will be distributed over 4 months and they will primarily take place on Monday and Tuesday from 16:00 until 21:00. We hope in this way to accomplish everyone needs.

The classes are given by master instructor Michele Lucarelli and a large team of professionals. Students will be provided with their own mixer, workbenches, and professional ovens to prepare pizzas.

Classes are mostly from 16.00 until 21.00*

*We will inform about possible time and dates variations in advance. 

Practical info and Rules

Students will receive a certificate of attendance and a book with all the notes and contents of the course.

Students will be provided with all the necessary equipment to attend the classes.


All classes will be held in Valby, Copenhagen, at Hotel- og Restaurantskolen, but you can expect some visits to local pizza restaurants.

General Rules

In order to receive the certificate, the student should attend all the classes. If the student has to miss any of the classes he/she needs to make sure to inform the teacher or the person in charge from HRS in advance. 


In order to guarantee your spot we ask that you pay a deposit of DKK. 2.500,00. You can get your deposit back by cancelling your submission one month before the starting date of the course. Please note the enrolment is complete only after the payment.

Once completed the application form we will send a deposit invoice to you. 

Price and payment

Price: DKK. 20.000 plus vat.

Price for former students of HRS: 40% discount, 12.000 ex. vat.

Small and medium-sized food companies in Denmark have the opportunity to apply for subsidy for skills development through relevant programs.

If you want to know more about the possibilities, and get help to apply, you can contact the Danish Food Academy - it’s for free and without obligation. It’s possible to apply for up to 60 % subsidy of the course fee.

In order to be able to apply for subsidy from a competence Funds, your employer must be covered by a collective agreement. You can read more about the possibilities here. 

Unfortunately, the Natural Wine Sommelier is not approved for the so-called positive-list, but a company can still apply for a subsidy and the application will be processed individually. It is expected that the application will be approved, but it’s not a guarantee.

Please be aware, that it has to be under condition of ‘self-selected’ education and the company will be able to obtain a subsidy of DKK 140 per hour for a maximum period of 74 hours, depending on the employee’s previous use of ‘self-selected’ education.

Michele Lucarelli

Michele Lucarelli started his pizzaiolo career in 1997. He grew up in Marche, Italy, and has worked at pizzerias in Italy, New Zealand and Denmark. 

In 2008, he received a diploma as Marche Food Ambassador from the chef school in Pesaro.  More recently, in 2017, Michele trained and studied at Moretti. In 2018, he completed a pizza master instructor degree with Piergiorgio Giorilli at the Accademia Nazionale Pizza DOC. 

In 2020, Michele started the Nordic Pizza Academy where he is in charge of its overall organization. At the Nordic Pizza Academy Youtube channel, you can find his videos presenting pizza books both in English and Italian.

Roger Vella

Co-founder at Nordic Pizza Academy. He started as a pizza chef aged 17 and worked both in Italy and Denmark in many prestigious restaurants and pizzerias.

Roger ran his own business in Italy before coming back to Denmark in 2012 and, since 2016, he has been a consultant for many pizzerias in Copenhagen.

In 2018 he became a master instructor thanks to Piergiorgio Giorilli and the Accademia Nazionale Pizza DOC. In 2020 he joined the Nordic Pizza Academy project, and now he takes care of the hands-on laboratory where he shares his wealth of expertise with the students.
