Do you dream of becoming a true pizzaiolo? To really learn the craft and science behind the perfect pizza?

Join Northern Europe's first complete professional education on pizza and become a master of the many aspects of pizza making, when we dive deep in to the science behind fermentation, test a variety of dough recipes and practice the craft that goes in to shaping the perfect pizza.

We also discuss the selction of produce and ingredients, examine baking techniques and temperatures and much more to get around all steps from dough to finished pizza.

The course is designed with a view towards career development and the needs of a professional pizza chef, but it is also a course for the passionate home cook who wants to master the art of pizza making.

Level 1 & 2

The course is divided in two - Level 1 & 2 - each consisting of three days of classes from 9:00-16:00. Read more about them below.

Classes are held in English by Nordic Pizza Academy's master instructor Michele Lucarelli and a large team of professionals. Students will be provided with their own mixer, workbenches, and professional ovens to prepare pizzas.

Practical info and Rules

All classes will be held in English.

Students will be provided with all the necessary equipment to attend the classes.

Location

All classes will be held in Valby, Copenhagen, at Hotel- og Restaurantskolen.

General Rules

After attending all classes, students will recieve a certificate of participation as well as a book of contents and notes from the course.

Deposit 

In order to guarantee your spot we ask that you pay a deposit of DKK 1.000. You can get your deposit back by cancelling your submission one month before the starting date of the course. Please note the enrolment is complete only after the payment.

Once completed the application form we will send a deposit invoice to you.

Price: DKK 4.500 incl. vat.

Former students of HRS recieve a 15% discount.

Subsidy

If your employer is covered by a collective agreement, you can read more of the subsidy here:

In order to be able to apply for subsidy from a competence Funds, your employer must be covered by a collective agreement. You can read more about the possibilities here. 

Unfortunately, the Natural Wine Sommelier is not approved for the so-called positive-list, but a company can still apply for a subsidy and the application will be processed individually. It is expected that the application will be approved, but it’s not a guarantee.

Please be aware, that it has to be under condition of ‘self-selected’ education and the company will be able to obtain a subsidy of DKK 140 per hour for a maximum period of 74 hours, depending on the employee’s previous use of ‘self-selected’ education.

Small and medium-sized food companies in Denmark have the opportunity to apply for subsidy for skills development through relevant programs.

Teachers of the course

Michele Lucarelli

Michele Lucarelli started his pizzaiolo career in 1997. He grew up in Marche, Italy, and has worked at pizzerias in Italy, New Zealand and Denmark. 

In 2008, he received a diploma as Marche Food Ambassador from the chef school in Pesaro.  More recently, in 2017, Michele trained and studied at Moretti. In 2018, he completed a pizza master instructor degree with Piergiorgio Giorilli at the Accademia Nazionale Pizza DOC. 

In 2020, Michele started the Nordic Pizza Academy where he is in charge of its overall organization. At the Nordic Pizza Academy Youtube channel, you can find his videos presenting pizza books both in English and Italian.

Roger Vella

Co-founder at Nordic Pizza Academy. He started as a pizza chef aged 17 and worked both in Italy and Denmark in many prestigious restaurants and pizzerias.

Roger ran his own business in Italy before coming back to Denmark in 2012 and, since 2016, he has been a consultant for many pizzerias in Copenhagen.

In 2018 he became a master instructor thanks to Piergiorgio Giorilli and the Accademia Nazionale Pizza DOC. In 2020 he joined the Nordic Pizza Academy project, and now he takes care of the hands-on laboratory where he shares his wealth of expertise with the students.
