Do you want to elevate your breakfast offerings and create memorable experiences for your guests from their very first bite of the day? In the Nordic Breakfast Lab, you’ll learn how to rethink classic breakfast and buffet dishes using inspiration from Nordic cuisine – focusing on flavour, seasonality, quality produce and presentation.

The course gives you practical tools to compose and present modern breakfast dishes and light meals that balance simplicity with creativity with a keen eye on sustainable produce and practice. You’ll work with high-quality ingredients, portion sizes and visual presentation to create appealing setups for buffets, breakfast service, catering for meetings and more.

You’ll also explore how sensory tools can be used to refine flavour, texture and overall expression – ensuring dishes full of complexity and variety so any guest can find something to satisfy their taste.

The course is hands-on and filled with inspiration you can bring directly back to your kitchen.

The course is held in English.

Who is it for?

This course is designed for professionals working with food production in restaurants, hotels, canteens or catering. It is ideal for chefs and kitchen staff who want to refresh and develop their breakfast offerings and gain new inspiration for modern dishes inspired by the Nordics.

Course Certificate

The course concludes with a written exam. Upon passing, you will receive a certificate documenting your skills.

Useful information

Food on the school

While taking a course at the school, you have several options for lunch.

  • The Restaurant. Employees, pupils, and course participants can eat a lunch menu made by our gastronomy pupils, and served by our waiter pupils.
  • Spisehuset. This is our canteen where you will find affordable green food.
  • Kaffebaren. This is the place to buy sandwiches, salads, fruit, and coffee.
  • Madboderne. When our pupils have made food, bread, ice cream, and cake - this is where you can taste it for yourself.

Smoke-free school

We have smoke free time at the school for everyone. That includes all social events, and it also applies outside of the school. 

The restriction bans all tobacco products including cigarettes, e-cigarrettes, and chewing tobacco.

Uniforms

If you have lessons in the kitchen, you have to wear an approved uniform. You can bring your own or borrow one from the school.
