International exchange
International exchanges are a valuable way of sharing knowledge, skills and new perspectives on gastronomy and hospitality.
Through Erasmus+ short-term mobility, we help arrange exchange programs and welcome students from across Europe.
As an international student, you can join our daily teaching and practical training in Denmark for a short-term stay, gaining hands-on experience in a professional learning environment at the heart of one of the world’s leading food cities.
Copenhagen is internationally recognised as a capital of gastronomy, hospitality and food culture.
Home to award‑winning fine dining, casual bistros and natural wine bars as well as vibrant street food scenes, bakeries and food markets, the city is known for its innovative culinary scene and a progressive approach to sustainability and urban living.
An exchange stay is not only about education — it is also an opportunity to experience life in a vibrant city where restaurants, hotels, food entrepreneurs and cultural institutions continuously push new ideas and standards.
Copenhagen offers inspiration at every level, from high‑end gastronomy to everyday meals, making it an exciting and relevant destination for future professionals in gastronomy and hospitality.
Exchange Options
We offer two primary exchange formats. The exact content of each stay is agreed in advance with our International Coordinator and may vary depending on timing, programmes and availability.
Option 1: Class-based exchange
Duration: 1 week
Students follow teaching alongside one of our regular classes, either at foundation or advanced vocational level, within programmes such as:
- Culinary Arts
- Service and Hospitality
- Receptionist
- Bakery and Pastry
- Nutrition Assistant
- Smørrebrød and Catering
Teaching is practice-based and workshop-oriented, using a lab-based methodology. Depending on the programme, students may take part in activities such as working in our fermentation rooms, foraging trips, or help run our student-driven restaurant.
Option 2: Practical Training Exchange
Duration: 2–4 weeks
This option focuses on hands-on experience in Spisehuset, the school’s bistro and canteen serving daily meals to students and staff.
The first day, you will be introduced to the school, our values and working practices. From then days will start with a morning briefing with the team, followed by practical work in the bistro from 7:30–14:00.
Exchange students work alongside fellow students and experienced chefs in a professional kitchen, contributing to the preparation and service of daily meals. However, while the focus is practical training, Spisehuset is also a collaborative learning environment with a strong emphasis on guidance, reflection and learning throughout the process.
