Green assistant (ENG)

Do you want to feel more confident in the kitchen and master the basic techniques that make everyday work easier – and the food better?

In the Green Assistant course, you will learn to prepare, cook and season dishes at a professional level. We work with the five basic tastes, ingredient knowledge, hygiene, and classic cold and warm preparations, giving you a solid foundation regardless of your role in the kitchen.

You’ll learn to work professionally with a focus on green, local, seasonal ingredients. Not only to strengthen your own skills, but also to make the kitchen’s daily workflow more structured, sustainable and flavourful. This course is for those who want to grow and take the next step in their kitchen work.

WHO IS THE COURSE FOR?

This course is ideal for those who already assist in the kitchen but lack technical grounding and want to feel more confident in their tasks. We work hands-on with handling vegetables, seasoning, plating and understanding the journey from fresh ingredients to leftovers that can be used creatively and climate‑friendly in new dishes.

CERTIFICATE

The training includes an oral and practical exam. When you pass, you will receive a certificate documenting your new skills.

On the course, you will learn to:

  • Prepare and cook classic cold and warm dishes
  • Understand and apply the five basic tastes when seasoning
  • Handle ingredients correctly – vegetables, grains, seeds, nuts, etc.
  • Work hygienically and follow self‑monitoring regulations
  • Plate dishes aesthetically and according to the kitchen’s concept
  • Make use of leftovers and work more climate‑friendly in the kitchen

Useful information

Food on the school

While taking a course at the school, you have several options for lunch.

  • The Restaurant. Employees, pupils, and course participants can eat a lunch menu made by our gastronomy pupils, and served by our waiter pupils.
  • Spisehuset. This is our canteen where you will find affordable green food.
  • Kaffebaren. This is the place to buy sandwiches, salads, fruit, and coffee.
  • Madboderne. When our pupils have made food, bread, ice cream, and cake - this is where you can taste it for yourself.

Smoke-free school

We have smoke free time at the school for everyone. That includes all social events, and it also applies outside of the school. 

The restriction bans all tobacco products including cigarettes, e-cigarrettes, and chewing tobacco.

Uniforms

If you have lessons in the kitchen, you have to wear an approved uniform. You can bring your own or borrow one from the school.
