WSET Level 2 Award in Sake

This 2-day course will teach you about the different types of sake and the production of them and you will try the different main types of sake.

What you’ll learn:

  • How to describe and assess sake quality using WSET Level 2 Systematic Approach to Tasting Sake (SAT).
  • Sake ingredients: Required vs. optional ingredients, including sake rice varieties.
  • Processing materials: How steamed white rice and kōji are prepared, rice polishing ratios, and kōji styles.
  • Sake production: Key techniques from fermentation to dilution and packaging, with a focus on style choices.
  • Common labeling terms, including key Japanese terms.

The course consists of both theoretical sessions and tasting sessions.

The course doesn’t require prior knowledge, but if you have no previous experience with sake, we recommend starting with the WSET Level 1 in Sake course.

Practical information

The exam

Your learning will be assessed by a closed-book exam of 50 multiple-choice questions, to be completed in 60 minutes.

Price

The course fee is 5.500 DKK (The fee covers all course material, all sake samples, exam fee and lunch/coffee.

Where

The course will be held at our premises at Hotel- og Restaurantskolen, Vigerslev Allé 18, 2500 Valby.

 

Payment

  • The course fee must be paid no later than 3 weeks before the first course day.

  • Cancellation of registration later than 3 weeks before course start is not possible, and the full course fee will be charged.

  • In the case of too few students we reserve the right to cancel the course.

Useful information

Food on the school

While taking a course at the school, you have several options for lunch.

  • The Restaurant. Employees, pupils, and course participants can eat a lunch menu made by our gastronomy pupils, and served by our waiter pupils.
  • Spisehuset. This is our canteen where you will find affordable green food.
  • Kaffebaren. This is the place to buy sandwiches, salads, fruit, and coffee.
  • Madboderne. When our pupils have made food, bread, ice cream, and cake - this is where you can taste it for yourself.

Smoke-free school

We have smoke free time at the school for everyone. That includes all social events, and it also applies outside of the school. 

The restriction bans all tobacco products including cigarettes, e-cigarrettes, and chewing tobacco.

Uniforms

If you have lessons in the kitchen, you have to wear an approved uniform. You can bring your own or borrow one from the school.
